Fine Dining full of waste?

Ok what i am learning is for Fine Dining at college, i have been learning cuttings n stuff. When cutting, the lecturer teaches us how to prevent wastage when doing it, for example cutting 1 whole carrot into 6 different cuttings without wastage.
But honestly, i think Fine dining has MORE wastage.

Wasting part 1) I have butchery classes every alternate thursday and, yes more wastage. When u cook a duck dish like a duck stew for example. Refer to pics below, You would use a whole duck n no wastage right? what he teach is, cut off the neck, wings,and dump it somewhere first. What he asked us to do is cut off the thigh and breast. After doing that, he asked us to cut the duck breast and discard the whole carcass with the drummet n extra edible fleshes with it. And then comes to a rabbit, He also told us, this is the only rabbit we will see for our entire 2 years diploma. All the cut is the tenderloin of the rabbit and the thighs of it. And he threw the body with the front legs attached. What a waste, + i asked the chef, can i take back the rabbit? sarcasticly, he said can can but dun use my plastic wrap or watever to bring it back ok? zha dau, too bad the place im staying doesnt have a fridge to use. otherwise i will bring alot of stuff back home n cook.

Wasting part 2) Im a person who doesnt like to throw away uneaten foods, I mean seriously, if u imagine urself living in poor countries without food, then u know lah. I went for commie which basically we go n help term 6 seniors to cook( mostly washing n cutting) IT was dam fun but the drawback is, more wastage, i mean alot. My senior, kent he was cooking beef, and duck breast, he n his mate allison, cook the meat first, then both of them made mistakes, allison made her huge duck breast into duckling breast in which the lecturer mentioned, n she putted it ontop of the cooking counter. Kent pula he left his beef into the oven too long and it was overcook la, i tot hes gonna cut it n serve, but he cutted it abit n throw it into the bin -.- zha dau still can eat ma diu. I was thinking " oh wat the fuck? give me eat better la". at least allison gave me n my classmate ching, to eat her overcooked duckbreast, dam nice n crispy. Another thing is, after sending their dishes to their lecturer to test, some wouldnt eat n will throw it away, so waste meh?. Only a few would bring back their dishes to eat.

Now i plan to bring tupperwares to class n if got extra foods, i bring back makan. Dowan waste money.

Orientation At TUC

IM currently having Diploma in Culinary Arts in Taylors University Collage.
Just had orientation on the weds last week. Was staying at joevins place so i could easily walk over to collage ;p .

First day was okay, I was so scared bout first day! But anyhow it turned up well. Met few guys, Ron frm Cameron Highlands, RObson from sban, and pravin frm ipoh. So far away man,. We got along quite well, n went through the orientation together till friday.

Btw im disappointed bout the student's restaurant training at the recezz area, The Temptations. I had Some pasta which has no taste at all -.- except the for freaking salty mushroom in it! Shawn was having lunch with us and he had chicken cordon bleu, and the cheese within the chicken wasnt even melted and the chicken is so tough!
Pravin had fish and chips, and this is the super disappointing part of all, the fish is still raw! in the inside, Only the breadcrumb layer is fried up. He had to take it back to them n they re-fry it again for him. How disapointing Is IT?

Then the next day we went back there n see what they have for sale, All the same menu as yesterday.THen this lady chef came n asked if we wanted to try their local cuisine for 6bucks for rice, chicken, fish n veggie. It sounds reasonable so we tried, and i had to say It really good/ and its so much worth it than any other food in the cafeteria. I had chicken rice few days back and it cost me 4.80, exp huh. So this place isnt bad for its local cuisine.

Friday after the orientation, we hanged out awhile n played pool in the students life centre, Many ppl was inside, Then this guy vincent Tan if im not mistaken said he would teach n show us how to do magic if we buyed the ticket frm him for his show on next friday. Pravin n Ron say they will buy next week n he showed us. And its really amazing . So freaking awesome lol;. Im so lazy to say what he did. ;p
Then after that, me joevin, jervin and melvin went back to sban bout 5+

Was asking my mom to cook this since sooo long ago, but she couldnt cuz she was busy with her work n such. But today :D i get to cook it! Heehe. Troublesome really, Gotta wash the duck buttocks clean the bulu n such, lols.
